Does a Capture Card, capture audio?

I really don't know how this works. When people record video game, gameplay do they use a mic? Let's say they are using an Xbox 360 do they use just the Xbox mic? Or do they just voice over when the video is in the editing process? I want to buy a capture card but i want to know at least how it works first.
